Masala Raan | Lamb Roast Recipe

Masala Raan or Lamb Roast never fails to impress guests especially on special occasions or during the festive season, both in the Western and Eastern cultures. Having quite a lot of cultural influence, it can definitely be said that it's quite a popular dish that is prepared by people from different cultures using different recipes. As the South Asians love their spices, 'Masala Raan' as the name also suggests is cooked with lots of different spices and condiments making it an extremely flavourful dish and is something your guests are ought to remember.
In my family, this dish is a favourite and is a must on the Muslim occasion of Eid. As we are in the last 10 days of Ramadan, and nearing Eid, I feel delighted to share my family recipe with you, so you can try this and enjoy with your loved ones.

INGREDIENTS FOR MASALA RAAN:
For marinade:
2 kg Leg of lamb (washed and cleaned)
4 tbsp raw papaya paste
2 medium onions (slice roughly & fry until golden brown, then blend to make a paste)
2 large onions (slice roughly & blend to make a paste)
1 tsp salt or as required
1 tsp red chilli powder
1/2 tsp garam masala powder
1/2 tsp coriander powder
1 tsp poppy seeds
1/2 tsp cumin powder (roasted in a pan)
4 tbsp gram flour (roasted in a pan)
1 tsp ginger & garlic paste
4 tbsp yogurt
2 tbsp oil
2 tbsp oil


For garnish:
Few fresh mint leaves
1-2 green chilli (diced or whole)
Onion rings
Onion rings
Lemon slices
INSTRUCTIONS:
Place the leg of lamb on a roasting dish, and rub raw papaya paste on the meat.Slice 2 medium onions roughly, fry until golden brown, then blend to make a paste.
Also slice 2 large onions roughly, then blend to make a paste.
Add the onion paste to the meat.
Now add salt, chilli powder and garam masala powder.
In a hot pan, roast cumin powder for 30 seconds and add to the lamb.
Stir fry gram flour in a pan on low heat for 2 minutes, until the gram flour slightly changes colour and turns brown, before adding it to the lamb.
Also add ginger and garlic paste, yogurt, oil and mix together.
Cover the dish with a cling film and refrigerate it for at least 2-3 hours, preferably overnight.
If you want to roast the leg of lamb in the oven, preheat the oven for 15 minutes on 220 degrees.
Place the dish in the oven, reduce the heat to 180 degrees and slow cook it for 3 hours.
The leg of lamb can also be cooked in a pot on the cooker.
For that, place the marinated lamb in a pot on a low heat, and cook for 1.5 - 2 hours until the meat is tender.
It's up to you to keep as much masala gravy as required.
If you want to roast the leg of lamb in the oven, preheat the oven for 15 minutes on 220 degrees.
Place the dish in the oven, reduce the heat to 180 degrees and slow cook it for 3 hours.
The leg of lamb can also be cooked in a pot on the cooker.
For that, place the marinated lamb in a pot on a low heat, and cook for 1.5 - 2 hours until the meat is tender.
It's up to you to keep as much masala gravy as required.
Once cooked, garnish Masala Raan with some mint leaves, green chilli, onion rings and lemon slices.
Preparation time: 15-20 minutes
Cooking time: 2-3 hours
