Lamb Mince & Spinach Pie Recipe - British Pie Week 2019

Since 2007, the British Pie Week is taking place every year, during the first week of March and this year, it falls between March 4th - 10th. Being a nation of pie lovers, celebrating the pie week is a brilliant idea for getting the whole family together and getting them involved in cooking, and trying out different pie recipes. Lamb is one of those ingredients that works perfectly in savoury pies, and it isn't just tasty, but it also provides nutritional value to those consuming it. Either you're a fan of savoury pies such as a cottage or shepherd's pie (both pies can include lamb mince as in ingredient), or prefer dessert pies such as an apple, spiced chocolate or a lemon meringue pie, there' s a choice for everyone!

INGREDIENTS FOR LAMB MINCE & SPINACH PIE:
(Serves: 3-4)

For cooking:
2 tbsp oil
250 grams lamb mince
1/2 tsp salt or as required
1/2 tsp black pepper
1/2 tsp garlic paste (or 2 cloves)
1/2 tsp chilli paste
1/2 tsp chilli paste
2 tbsp chopped tomatoes
200 grams spinach (fresh or frozen)
1/2 tsp dried mixed herbs
100 grams reduced fat soft cream cheese
1 roll of shortcrust pastry
1 beaten egg
INSTRUCTIONS:
For the filling:
Add the oil in pot and heat it gently.
Add the lamb mince to the pot.
Add salt (1/2 tsp or as required) & half tsp black pepper for seasoning.
Add the garlic and green chilli paste that can be prepared by grinding both together.
Saute the lamb for 5-8 minutes on medium heat, until the mince turns brown from pink.
When the colour of the mince changes, add the spinach and cover the lid to cook for another 10 minutes.
Add 1/2 tsp dried mixed herbs (Store bought bottle contains thyme, basil, oregano & marjoram)
Preheat the oven to 250°C for 15 minutes
Once cooked, set the mixture to cool for 5 minutes and add the cream cheese, and mix well.
For the topping:
You can prepare your pastry at home or use a shop bought shortcrust ready-rolled pastry.
Once the filling is ready, add it to an oven safe dish, and cover it with the pastry.
Brush using a pastry brush. the top of the pastry with the beaten egg.
Reduce the oven heat to 220°C and cook for 20-25 minutes.
Make sure to check once or twice to ensure the pastry isn’t burning because every oven has a different setting (I keep my pie on the bottom tray)
Preparation time: 15 minutes
Cooking time: 30-40 minutes

ReplyDeleteOooh National Pie Week! I love the lamb and spinach combo - looks delicious! I bet it would be great if it were chicken curry and spinach pie OR if someone wants it veggie a potato and spinach with pine nut curried pie. (Can you tell I am in to the whole pie thing?)
